Master of the Restaurant Seating Chart – NYTimes.com

Mr. Fogg faxes or e-mails the names at around 4 p.m. to Jonathan Kelly, a former assistant to Mr. Carter who is now an associate editor at Vanity Fair. Mr. Kelly, 27, knows his boss’s mind so well that Mr. Carter trusts him to rough out seating plans for the Waverly Inn and the Monkey Bar.

Around 4:30, Mr. Kelly heads into Mr. Carter’s office to complete the seating charts. With a reporter present, Mr. Carter was at pains not to be seen preferring one customer over another. He insisted anything he said about individuals be off the record.

He needn’t have bothered. He and Mr. Kelly have been doing this daily for nearly three years and speak in a mostly undecipherable code of half-finished sentences and quick mumbles. Donning glasses with clear plastic frames as he gazed at the seating chart for the Monkey Bar, Mr. Carter said, “Mmng, switch 7 and 8.”
